GOOD KARMA KALE SANDWICH

MAKES 1 SERVING

It seems almost wrong to me to give you recipes for sandwiches. In my world, sandwiches are ad hoc things, stacked together with whatever sounds good at the moment, coupled with whatever we have in the fridge. It’s from that creative yet practical place, that this Good Karma Sandwich comes from! Feel free to change it up in any way that appeals to you!

2 tablespoons hummus or refried beans or white bean dip

2 pieces whole grain bread

1 thin slice red onion

¼ cup leftover kale salad or cooked kale dressed with 2 teaspoons of your favorite dressing

1. Toast bread until golden.

2. Spread toasted bread with hummus.

3. Cover one slice of bread with leftover kale salad and red onion. Top with remaining piece of toasted bread.

KALE IN SCOTLAND

Kale was grown as a staple crop in the Scottish Islands due to its extreme hardiness, and was given protection from the elements in purpose-built kale yards. Indeed, almost every house had a kale yard and preserved kale in barrels of salt, similar to sauerkraut in Germany. They also fed it to livestock through the winter. Kale continued to be extremely important until potatoes came to the Islands towards the end of the 18th century.
